Snack Smart Healthy Snacks

BANANA POPS

Ingredients:

Banana on a stick
yogurt
nuts, coconut or granola


Directions:

  1. Dip banana in yogurt
  2. Then roll in nuts, coconut, or granola.
  3. Freeze.

FRUIT DIP

Ingredients:
6 oz can frozen apple juice concentrate
6 oz can water
1/2 tsp. cinnamon
1/4 tsp. Vanilla


Directions:

  1. Mix all ingredients together in a saucepan and bring to a boil, stirring constantly.
  2. Remove from heat and serve as a dip for fruits or use over ice cream.

MINI PIZZA

Ingredients: per child
1 canned biscuit
1 tsp. grated mozzarella cheese
1 Tbl. tomato sauce
1 tsp. grated Parmesan cheese
2 small pepperoni slices


Directions:

  1. Flatten a biscuit and spoon tomato sauce on it.
  2. Sprinkle mozzarella cheese on sauce and put pepperoni on the cheese
  3. Sprinkle meat with Parmesan cheese.
  4. Bake in toaster oven for about 10 minutes.

RAISIN LETTERS

Ingredients:
1 pkg. softened cream cheese
1 rice cake for each child
3/4 cup raisins

Directions:
1. Spread cream cheese on rice cakes.

2. Use raisins to make letters on the rice cakes.

Another Suggestions

*Ask the child to hand you a rice cake with a certain letter on it. Like the first letter of their name.

FINGER JELLO (KNOX BLOX)

Ingredients:
7 envelopes unflavored gelatin (or 4 envelopes unflavored gelatin and 3 envelopes flavored)
4 cups boiling fruit juice (or 4 cups boiling water)


Directions:

  1. Mix and pour into a 13" X 9" pan.
  2. Chill until firm and cut into squares

STRAWBERRIES AND BANANA SMOOTHIE

Ingredients:
6 Strawberries
1 Banana
¼ Strawberry yogurt
3 Ice Cubes

Directions:
1. Process ingredients in blender to puree

SPIDER PRETZELS

Ingredients:
2 round crackers
2 tsp. peanut butter
8 small stick pretzels
2 raisins

Directions:

  • Make a “cracker sandwich” with the peanut butter
  • Stick the pretzel “legs” in the middle of the sandwich
  • Stick the raisin “eyes” on top with a dab of peanut butter

ORANGE FROSTY

Ingredients:
½ cup frozen orange-juice concentrate
1 cup milk or plain yogurt
1 teaspoon sugar, optional
4 to 5 ice cubes

Directions:

Place all ingredients in a blender or food processor and blend

ANTS ON A LOG

Ingredients:
Celery
Peanut butter or cheez Whiz
Raisins

Directions:

  1. Fill celery with peanut butter or cheese whiz
  2. Add raisins on top

BUGGY WHEELS

Ingredients:
1 Carrot and 1 celery stalk per 2 children
peanut butter and raisins
toothpicks

Directions:

  • Cut carrot into disks shapes.
  • The toothpicks form the back and front of the buggy. The carrots form the wheels. First, insert a toothpick through 1 carrot disk and repeat for the other set of wheels.
  • Spear the celery with the toothpick wheels, making it look like a car.
  • Spread peanut butter on celery and add raisins.

GRANOLA

Ingredients:
3 tsp. Rolled oats
1 tsp. Sunflower seeds
3 raisins
1 tsp cashews
1/8 of a cup molasses

Directions:
1. Fry all ingredients together in a small amount of oil

JELLO FREEZE POPS

Ingredients:
3 oz package of Jello (flavored gelatin)
1 cup of hot water
2 cups any juice (should compliment jello- orange juice with orange jello)
(12) 3 oz cups and 12 wooden craft sticks

Directions:

  • Boil Water and mix until jello is dissolved
  • Add juice and pour mixture into cups
  • Refrigerate after an hour insert sticks into cups and freeze until solid

CROCODILE SMILE SNACKS

Ingredients;
Green apples
Peanut butter
Miniature marshmallows

  • Directions:
  • Cut apples into eights
  • Give each child 2 slices
  • Have the children spread some peanut butter on each slice
  • Put marshmallows on top
  • Place the other apple slice on tip of the marshmallows to complete the smile

PEACH DESSERT

Ingredients:
Canned peach halves
Frozen yogurt
Granola

Directions:

  1. Place a scoop of frozen yogurt inside the peach half
  2. Sprinkle on granola

QUICK GRAHAM CRACKER DESSERT

Ingredients:
Graham Crackers
Honey
Milk

Directions:

  • Crumble graham crakers in a bowl
  • Add a little honey and warm milk
  • Mash and Mix

OATMEAL BARS

Ingredients:

2 cups of uncooked oatmeal
½ cup of butter
¾ brown sugar
Baking soda

Directions:

  • Boil sugar, butter and a dash of baking soda
  • Add oatmeal
  • Spread mixture on a well-greased cookie sheet
  • Bake at 350 degrees for 10 minutes
  • Cut into bars and eat

INSTANT HOMEMADE BANANA PUDDING

Ingredients:
½ small Banana
3 Tablespoons of applesauce
1 teaspoon plain yogurt

Directions:

  • Mash Banana
  • Add applesauce
  • Stir in 1 teaspoon plain yogurt

PEANUT BUTTER BALLS

Ingredients:
½ cup of peanut butter
2 ½ tablespoons non fat diary creamer
2 tablespoons raisins
2 tablespoons honey
¼ cup coconut
raisins, sesame seeds or granola

Directions:

  • Mix ingredients together
  • Form into Balls
  • Roll in sesame seeds or granola

APPLES IN HAND

Ingredients:
Apples
Peanut butter
Raisins
Wheat germ or granola

Directions:

  • Core Apples
  • Mix Peanut butter with raisins, wheat germ or granola
  • Slice the apple in half and fill the core with mixture

TRAIL MIX

Ingredients:
Pretzels
Goldfish crackers
Raisins
Peanuts
Dry fruit or dry cereal

Directions:

  • Pour pretzels in a bowl with a cover
  • Pour in goldfish, raisins, peanuts and dry fruit or cereal
  • Put lid on the bowl and shake

PYRAMID TORTILLA RECIPE

Ingredients:

1 8-inch tortilla
2 ounces thin sliced turkey or ham
2 Tablespoons shredded cheese
1/4 cup shredded lettuce
1 Tablespoon raisins
Fat Free cream cheese

Directions:

  • Have children spread cream cheese on their tortilla.
  • Then layer on the meat, cheese, lettuce and raisins.
  • Roll up and enjoy.

JELLO APPLE WEDGES

Ingredients:
One box of sugar free Jello any flavor
One Red Delicious Apple

Directions:

  • Pour box of Jello into plastic bag
  • Slice the apple into wedges
  • Drop the apple wedges into the Jello mix and shake until apple wedge is completely covered in Jello
  • Chill for about one hour and serve

JUICY FINGER BLOCKS

Ingredients:
3 envelopes unflavored gelatin
3/4 cup boiling water
1-12-oz. can frozen apple, orange, grape, or other juice concentrate

Directions:

  • Dissolve gelatin in boiling water.
  • Add juice and stir until mixed.
  • Pour into a lightly greased 9 x 13 inch cake pan.
  • Chill in the refrigerator about 2 hours until firm.
  • Cut into squares or use cookie cutters to make shapes.
  • Store in an airtight container in the refrigerator.

EDIBLE AQUARIUMS

Ingredients:
Melba Taost
Fat Free Cream Cheese
Goldfish Crackers ( babies if possible)
Blue Food Coloring

Directions:

  • Add a few drops of food coloring to the cream cheese
  • Spread the cream cheese on the melba toast
  • Add Goldfish

CREPES

Ingredients:
1/2 cup flour
2 eggs
1 tsp. sugar
1/2 cup skim milk

Directions:

  • Combine all ingredients with a wire whisk and set aside 5 minutes.
  • Heat a small non-stick pan using about 2 Tbl. batter per crepe.
  • Use a swirling motion with your wrist to evenly coat pan. When brown, turn briefly, and then serve.
  • May be filled with any filling desired

COCONUT UGLIES

Ingredients:
1/4 cup peanut butter
2 Tbl. powdered dry milk
1 tsp. honey
flaked coconut, peanuts, and licorice string

Directions:

  • Mix peanut butter, milk and honey.
  • Roll into a ball.
  • Sprinkle with coconut hair.
  • Press on peanuts for eyes.
  • Cut licorice strings into sort pieces for tail and antennae.

CRUNCHY BANANAS

Ingredients:

banana cut into 1" thick slices
popsicle stick
orange juice
coconut, wheat germ, or chopped peanuts


Directions:

  • Spear banana slices with stick
  • Dip in juice
  • Roll in favorite topping

SPINNING WHEELS

Ingredients:
2 slices whole wheat bread with removed crusts
peanut butter
1/2 banana


Directions:

  • Spread peanut butter on the bread. Peel the banana and cut it 1/2 lengthwise and across.
  • Put banana on peanut butter and put together like a sandwich.
  • Flatten with a rolling pin.
  • Roll and cut

APPLESAUCE MUFFINS

Ingredients:
2 Tbl. whole wheat pastry flour mixture (2 cups flour, 2 tsp. baking powder, and 1/2 tsp. salt)
1 Tbl. applesauce mixture (1 cup applesauce, 1 tsp. cinnamon)
1 tsp. egg
1/2 Tbl. oil
1 Tbl. brown sugar

Directions:

  • Mix all ingredients and pour into a lined muffin tin.
  • Bake at 350 degrees for 20-25 minutes.
